1First cook the rice such that each grains are separate. Spread it on a tray to cool. Once it cools a bit, proceed.
1For Orange Rice
2Heat oil in a pan and pop the mustard seeds.
3Add the chopped onions and saute for couple of minutes.
4Add the tomato puree, red chilly powder, salt and garam masala.
5Cook till oil separates from the masala.
6Take 1/3rd of the cooked rice and toss with the masala.
7Check for seasonings and switch off.
8For White Rice
9Heat oil in a kadai and splutter the mustard seeds.
10Add the channa dal and urad dal. Fry on low heat till it turns golden brown.
11Add the grated coconut and roast it for just a minute.
12Add salt, another third of the rice and mix together. Switch off.
13For Green Rice
14Take the coriander leaves, green chili, cashews in a mixie or blender. Make a smooth paste with required water.
15Heat oil in a kadai, splutter the mustard seeds.
16Fry the urad dal and then add the ground paste.
17Saute for few minutes till the raw smell is gone.
18Add salt and mix in the remaining rice. Switch off.
19Finally arrange the different rice as our national flag and serve hot!
