1Crumble the idlis using your fingers and set aside.
2Heat 2 – 3 tsp oil in a kadai over medium-high heat.
3Add chopped onion, little salt, minced ginger, garlic and saute for a couple of minutes. Bring down the heat to low.
4Add turmeric powder, chilly powder, coriander powder and saute for a minute until their raw smell is gone. Add chopped tomatoes and saute until they get mashed up.
5Next add idli podi, garam masala powder and saute for a minute.
6Add crumbled idli, beaten eggs, salt and cook for 6 – 8 minutes until dry.
7Sprinkle a pinch of garam masala powder, idli podi and chopped cilantro.
8Give it a stir and switch off. Sprinkle some chopped onion and serve hot!
