Egg Curry


Indian Spiced Egg Curry is a tasty and simple curry that is quick and easy to prepare. Made with tomatoes, chilies, coriander and Egg masala.

    5 Boiled Eggs

    3 Big Onions

    40 g Eastern Egg Masala

    3 tbsp Refined Vegetable oil

    3 Green Chilly, sliced

    Curry leaves


    Water, as required

    Salt to taste

  • Preparation--

    1Boil the eggs and set aside.

    2Peal off the shell and Slice them when cool.


    1Heat oil.

    2Add mustard and saute sliced onion till golden brown.

    3Add green chilly, Curry leaves and salt.

    4Add Eastern Egg Masala and saute further.

    5Pour the required water and bring to boil.

    6Now add sliced eggs.

    7When gravy thickens remove from flame and serve hot.

    This is a nice way to make egg sukka masala. I remember eating this many many years ago. In the gravy less form, the addition of curry patta and mustard seeds gives it a completely different flavour than the usual recipe with tomatoes. I think, not adding tomatoes is the key to many dishes because that always dominate. Invariably 9 out of 10 use the same method: onion, ginger, garlic, cumin and coriander. C’mon, give me a break. One can add a dash of – half tea spoon of crushed ginger garlic. Take care to keep them a little raw. The curry patta as such gives a very subtle flavour. Only add as much water to make the masala moist, one tablespoon? Okay. Avoid the temptation to add jeera.

    can’t you guys give measurements in tbsp or tsp instead of 40 gms. Use some commonsense.
